蛋壳可以反映鸡蛋的新鲜程度?鸡蛋要洗吗?有专家表示,如果鸡蛋壳出现1种情况,则代表可能已经被细菌感染,可导致食物中毒,不宜进食。他亦指,用清水洗鸡蛋其实是错误做法,并教3招分辨新鲜鸡蛋及变坏的鸡蛋。
用清水洗鸡蛋超错?
毒理学教授招名威在Facebook专页发文表示,鸡蛋买回家后,不需用水清洗,原因如下:

鸡蛋不宜清洗原因
招教授解释,鸡蛋表面有多达8千个肉眼看不见的小孔,如果用水清洗鸡蛋,就会令水分从蛋壳渗入至鸡蛋内部,甚至将细菌带入鸡蛋内部。另外,当蛋壳接触到水分时,蛋壳上的保护膜亦会被清除,令鸡蛋变得容易受感染,导致食物中毒。
鸡蛋是否完全不宜清洗?招名威教授又指,虽然存放鸡蛋前用水洗会增加变坏风险,但烹煮鸡蛋前反而应该用清水清洗鸡蛋,因为蛋壳上可能存在沙门氏菌,如果没有洗鸡蛋就直接烹煮,同样可能会令鸡蛋受感染。

3招分辨新鲜蛋
1. 将鸡蛋放入冷水
- 将鸡蛋放入装满冷水的容器中,如果鸡蛋直接沉入水底就是新鲜鸡蛋。
- 如果一开始往下沉,之后再浮上水面,就是过期鸡蛋。
- 因为不新鲜的鸡蛋水分会减少,令蛋内的气体变多,容易令鸡蛋浮上水面;而新鲜鸡蛋则没有气体,所以会沉入水底。
2. 用灯光照鸡蛋
- 用灯光照鸡蛋,如果鸡蛋尾部的气室越大,就代表鸡蛋越不新鲜。
- 原理与放入水中相同,当鸡蛋不新鲜,蛋内的气体就会增加,令鸡蛋的气室变大。
3. 观察蛋白形状
- 直接把鸡蛋打在碟上,如果蛋白呈较厚的圆拱形,就代表鸡蛋的品质较好。
- 如果蛋白呈较稀的扁平状,就代表鸡蛋的品质较一般。

招名威教授表示,超级市场售卖的鸡蛋,最佳保存期一般为1至2周。至于存放超过2周的鸡蛋是否不能食用,继续吃会否食物中毒?他解释指,鸡蛋是蛋白质所组成,如果存放时间超过最佳保存期,蛋白质就会变质,细菌含量可能会增加。因此如果鸡蛋出现以下情况,就不宜再进食:
