防癌食物|每日飲1款咖啡 患肝癌風險減75% 研究揭最佳份量

肝癌為香港第3號致命癌症,一年奪去1,447人性命,情況不容忽視。喝咖啡不只能提神,更可防肝癌?日本一項研究發現,每日喝咖啡可以保護肝臟,如果每日喝咖啡達到最佳份量,防癌率可高達75%。有醫生表示,不同咖啡的護肝效果也不同,其中1款咖啡成效最好!
研究揭飲咖啡可減患肝癌風險
喝咖啡也有保健功效?日本多間大學的學者曾進行一項研究,探討喝咖啡對肝臟健康的影響,研究結果在2005年刊登於《美國國家醫學圖書館》(National Library of Medicine)。

研究人員追蹤10萬名年齡介乎40至79歲的東京上班族,收集其飲用咖啡的習慣及身體狀況。研究對象的飲用咖啡習慣可分為3組:從不喝咖啡、每日少於1杯及每日多於或等於1杯。
研究結果發現,有飲用咖啡習慣的人(不論每日多於或少於1杯),其肝癌、肝硬化的發病率比沒有喝咖啡習慣的人士較低。只要每日喝1杯咖啡,就能降低25%患肝硬化及肝癌風險,如果將飲用量提高至每日4杯,防肝癌率更高達75%。

醫生解構咖啡防癌原因 1款咖啡護肝效果最好
為甚麼咖啡能夠防肝癌?腎臟科醫生江守山在節目《健康晚點名》上表示,咖啡含有「綠原酸」與「葫蘆巴鹼」,這2種成分能幫助肝臟抵抗毒素,減低病毒、藥物、有毒物質及酒精對肝臟造成的傷害。
江守山醫生又指,「綠原酸」的耐熱性只有攝氏400度,因此咖啡豆不宜過度烹煮,應該選擇輕至中度烘焙,才能保留最佳防癌功效。他又引述其他研究指,不同款式咖啡的護肝功效也不一樣,當中美式咖啡(即齋啡)的護肝效果最好,其次是意式咖啡,至於虹吸咖啡和冰滴咖啡的護肝效果最一般。
